It blows high-speed cold air (8-20m/s) from below the mesh belt, causing food particles to form a fluid like suspension state under the action of airflow. At the same time, combined with extreme low temperatures of -30 to -40, the surface temperature of the food drops sharply below freezing point within 1-3 minutes. This design enables the rapid formation of ice crystals in intercellular spaces, with a diameter controlled within 50 μ m, much smaller than the traditional quick freezing range of 200-500 μ m, thereby reducing the rate of cell rupture.
The working principle of a single freezer mainly includes the following steps:
Pre cooling stage: After entering the single freezer, the food first passes through the pre cooling zone, where the temperature gradually decreases, preparing for rapid freezing in the future.
Fluidized freezing stage: High speed cold air is blown from below the mesh belt, causing food particles to suspend and be uniformly cooled, resulting in rapid freezing.
Cryogenic stage: Food is further frozen at extreme low temperatures to ensure that the internal temperature reaches the required low temperature.
Single freeze machine is widely used for rapid freezing of fruits, vegetables, seafood, meat and other foods, which can effectively preserve the color, taste and nutritional content of the food. For example, strawberries can be reduced from 20 to -18 in 90 seconds in a single freezer, while traditional quick freezing takes more than 30 minutes. Experimental data shows that the thawing cell rupture rate after single freezing machine treatment is only 8%, while traditional quick freezing reaches 35%.
